Please tell me you've heard of a pizookie & please tell me you've tasted (or at least smelt) browned butter. They are possibly the best creation ever made. In this case, it's double the greatness because we've decided to pair them together.
What's a pizookie, you ask? Well, literally, it's the word "pizza" and "cookie" put together. The dish is a cookie batter baked in a round baking pan (or sometimes individual ramekins). Looks like a pizza, can be sliced like a pizza but tastes like a cookie. A huge chewy, chunky, chocolatey, soft cookie topped with vanilla ice-cream. And just when you thought it can't get any better than that, this recipe uses browned butter.
Let me tell you a little about the incredible browned butter. I was introduced to it back when I made this. I had heard all the rave about browned butter but was never confident enough to make it. I still can't believe I waited that long to finally try it. I absolutely love it. It has a distinct nutty aroma and flavor. Browning butter can be a little tricky, just make sure you keep an eye on it at all times to prevent the butter from burning. Trust me, the transition from browned to burnt can be in a matter of seconds. However, if you haven't tried it, you are totally missing out!
It's amazing how the flavor of the browned butter comes through strongly. It truly is the star of this dessert. If you've never had a pizookie before, start with this recipe and I know you'll have many more pizookie filled days and nights :)
Browned Butter Chocolate Chip Pizookie
Ingredients:
1 1/2 cups flour
1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
3/4 cup brown sugar
1/4 cup granulated white sugar
1 stick (113g) butter
1 egg
1 tsp vanilla
3/4 cup semisweet chocolate chips
Directions:
To brown the butter, heat a pan over medium heat. Cut butter into little pieces and melt in pan. Stir continuously. Butter will foam up. After foam subsides, small brown flecks will start to appear in the bottom of the pan. Continue stirring until butter has reached a nice brown color and start to give out a nutty aroma. Remove from pan immediately.
Grease an 8-inch round baking pan or individual ramekins. Mix flour, baking soda, baking powder and salt in a bowl. Pour browned butter over sugars in a medium bowl. Mix. Add egg and vanilla. Stir until well blended. Slowly mix in flour mixture. Mix in chocolate chips. Transfer dough into the prepared pan. Bake at 350F (C) for 12-14 minutes. You want the edges to set and the centre to be gooey. Top with your favorite vanilla ice-cream!
