Grilled Peach Trifle


This is a simple recipe to use up your fruits in the best possible way. Grilled peaches in spiced maple syrup with whipped cream and crumbled shortbread. You could substitute peaches with just about anything from plums, nectarines, apricots to apples, pears and bananas. If you're looking towards tropical fruits and summer berries, I would suggest swapping the maple syrup out for mild honey, which will lend the perfect sweetness to berries.

Grilled Peaches in Spiced Maple Syrup with Whipped Cream & Crumbled Shortbread

Ingredients:
2 peaches, cubed
2 tablespoons butter
1/4 cup pure maple syrup
1 small cinnamon stick
pinch of cayenne pepper
pinch of salt
1/2 cup whipping cream, cold
2 to 3 shortbread cookies

Directions:
In a small saucepan over low heat, toss cubed peaches with butter until soft, about 5 to 10 minutes. Set aside.

In another saucepan, heat maple syrup with cinnamon stick, pinch of cayenne and salt. Cook until just heated through. Turn the heat off and set aside.

In a cold bowl whip cream until soft peaks form.

Put shortbread cookies in a freezer bag and crumble with a rolling pin, or you could use your hands it's easier but make sure they're clean:)

Assemble in a small glass or bowl, whichever you prefer. Start by adding the shortbread crumbles to the bottom of the glass followed by a dollop of cream and a drizzle of maple syrup, then add the peaches with a little bit more of cream on top, maple syrup and shortbread crumbles to finish it off. Now, you may dig in.

grilled plum & arugula salad


This is the salad dish that I made on Bella earlier this morning. Thanks to everyone who watched and requested for the recipe! Like I said, when it comes to salads & dressings I usually stay away from measurements because you can use as little or as much as you want. So feel free to change it up if you like.

Also you don't have to restrict yourself to plums. You can use caramelized apples and/or pears, grilled peaches and/or apricots and many other fruits! Anyway, hope you like it as much as I do.

grilled plum and arugula salad

Ingredients:
1 tsp honey
1 tbsp dijon mustard
2 tsp fresh lemon juice
3 tbsp extra virgin olive oil
salt and freshly ground pepper
freshly chopped dill and thyme

a bunch of fresh arugula (or rocket)
a bunch of fresh baby spinach
2 tbsp (or more) toasted pine nuts
1 plum, thinly sliced
crumbled fresh goat cheese

Directions:
For the dressing, combine honey, dijon mustard, lemon juice, extra virgin olive oil, salt, pepper, dill and thyme in a medium bowl. Whisk until slightly thick. Set Aside.

In a medium saucepan over low heat, lay the plum slices and grill for 1 to 2 minutes per side. Transfer to a plate and set aside.

Pour one or two tablespoons of the dressing into a salad bowl, coat the bottom and sides of the bowl, add in arugula, spinach and pine nuts and toss to combine (you can use tongs or your hands!). Transfer to a plate, top with grilled plums and few crumbles of goat cheese. Yum!
