doughnut extravaganza

Fried doughnuts. I love the sound of that (aside from frosted cakes). You probably know by now that I love frying things and as much as I like baked doughnuts (these cinnamon-sugar ones were delicious!!), I think I kind of prefer fried doughnuts.

This is one of the easiest doughnut recipes out there. But very sticky. Whatever you do, do not add more flour. I know you might be tempted to because it's super sticky but that's how it's suppose to be. By refrigerating it overnight or more than 4 hours, the dough tends to be more forgiving and easier to roll out. I refrigerated mine for 2 days and I found the texture to be light, airy and perfect.

I should tell you that this was the first time I had ever attempted at making (and frying) doughnuts. The fillings were amazingly delicious and uncomplicated to make.

Its difficult to pick a favorite out of the three. I love all of them. I was particularly excited for the raspberry mango jam because mangoes are one of my favorites. The sweetness of the mango and the tartness of the raspberry, the best combination.

The lemon cream is made the same way you would a lemon curd. I love lemons and this filling was SO GOOD! Lemony and creamy.

The dark chocolate caramel filling is so rich and so delicious, I was eating it off of a spoon. The caramel and the chocolate together almost reminds me of a chocolate toffee. You have to try it.

I would definitely make these again. It does take quite a bit of work but it is so worth it! I'm looking forward to experimenting with different kinds of flavors for the fillings! I hope you give these a try!

P.S- They are best served the day they are made, warm and light! It gets a little bit tougher the next day. For me, at least.
