red velvet hot cocoa with cream cheese whipped cream


Aside from food, I'm completely obsessed with movies. I probably watch over five or more movies in a week, only because I have all the time in the world (homework can wait). One of my favorite movies, or should I say my only favorite movie ever is Waitress. Personally, I think it's completely underrated. Not many people have heard or seen this movie but it's an absolute heart-warmer. A story about a pregnant waitress in the South stuck in an abusive marriage and slowly begins to build a love relationship with her gynecologist. Aside from the amazing story line, this movie is filled with images of delicious pies. If you haven't seen it, you're totally missing out!


There's no better feeling in the whole world than being in a cold room, snuggled up under your blanket, watching your favorite movie with a cup of rich hot chocolate. That is exactly what I did today. This isn't your ordinary hot chocolate. It's a cup of velvety and creamy hot chocolate with a sweet fluffy cream cheese whipped cream. The only thing missing was a big piece of homemade pie.

Red Velvet Hot Cocoa with Cream Cheese Whipped Cream

Serves 4

Ingredients:
4 cups whole milk
1/8 tsp (a splash) water
3/4 cup semi-sweet chocolate chips
1 tsp red food coloring (I used way less than the suggested amount, hence, the lighter color)
1 cup heavy whipping cream
2 tbsp sugar
3 tbsp (more or less) cream cheese, at room temperature
Cocoa powder, for dusting

Directions:
Combine the heavy cream and sugar in a mixing bowl and whip until soft peaks form, 2 to 3 minutes. Add in the cream cheese and continue to whip to stiff peaks. Set aside in fridge.

In a medium saucepan, heat the milk over medium heat. Add a splash of water and the chocolate chips, stirring gently. When almost melted, take the pan off the heat and add in the red food coloring, continue to stir. When the chocolate chips are thoroughly melted, pour into individual cups, top with whipped cream and a sprinkle of cocoa powder (I like a lot of cocoa powder on my hot cocoa, as you can see. If you don't, just sift 1/2 a teaspoon over the whipped cream).
